A dish with deep root into the city of Rome made of Spaghetti (or bigoli) tomato sauce, "Guanciale" (or bacon), onion, pepper and pecorino romano (or Grana padano / Parmigiano ). We celebrate it with some varionts like the Amatriciana bianca or Gricia, without tomato sauce or a creamy version from our chef called "Amatriciana Alfredo".
